Good Bowls - Country Mac n’ Cheese Recipe

At Good Bowls, we share all of our recipes. Meet the vegetarian version of the famous Farmhouse Mac. The Country Mac is the warm comfort food you grew up with with the healthy Good Bowls spin. It’s packed with vegetables and a bit of fruit - 40% by weight per batch. And it’s still that creamy cheesy goodness that you’ve always loved.

Country Mac ‘n Cheese

Ingredients - Serves 4

Black Beans - 15 oz - 1 can
Broccoli - medium florets - 5 oz
Sweet Potatoes - small cubes - 5 oz
Yellow Squash - moons - 5 oz
Apple - summer crisp - peeled and cubed
Cellantani noodles (or other spiral) - 1 lb dry

Extra Sharp Cheddar Cheese - cubed - 14oz
1% milk - 2.5 cups
Flour - 5 tbsp
Olive oil -11 tbsp (divided)
Black pepper - 1/2 tsp (divided)
Salt 1.25 tsp (divided)
Smoked paprika - 1/2 tsp
Onion Powder - 1/4 tsp
Yellow Mustard - 2 tsp
BBQ Sauce (version of honey bbq/Sweet Baby Rays) - 3 tbsp

The Chicken Tikka Masala Bowl - a classic take out dish with tender marinated chicken, tangy red Indian-inspired sauce, seasoned roasted vegetables over coconut brown rice.

Preparation:

  1. Rinse black beans and put in pot on low/simmer.  Add 3 tbsp BBQ sauce and stir.

  2. Cook pasta to al dente (or minute below al dente) and drain

  3. Cut vegetables and place in separate bowls.  Add 2 tbsp of olive oil to each bowl. Divide, 1/2 tsp salt and 1/2 tsp pepper to all 3 bowls and stir.

  4. Peel, core, and cut apple.  

  5. Place sweet potatoes on baking sheet and bake on 410º for about 8-10 minutes until soft but not mushy.

  6. Place broccoli on baking sheet and bake on 410º for 6-8 minutes until softened but not mushy

  7. Place squash on baking sheet and bake on 410º for 4-6 minutes until tender.

  8. Make sauce - add 5 tbsp flour and 5 tbsp to medium heat and whisk until lightly browned.  Stir in room-temperature milk in phases, stirring regularly.  Bring to simmer and reduce heat to low.  Slowly add in cubed cheese, paprika, onion powder, yellow mustard, and 3/4 tsp of salt and stir until cheese is fully melted and sauce is creamy.

  9. Chop roasted broccoli and roasted squash into smaller pieces.

  10. Mix together all ingredients in large dish.

  11. Scoop 12 oz of well mixed ingredients into bowls and seal.
