Good Bowls - Chicken Tikka Masala Recipe

At Good Bowls, we share all of our recipes. The classic take out dish is now a Good Bowl and now you can make this Indian inspired classic at home. It has the tender marinated chunks of chicken in a tangy red sauce that you expect from a Tikka Masala and it’s also packed with roasted vegetables that all go great together over some coconut brown rice.

Chicken Tikka Masala

Ingredients - Serves 4

Chicken Marinade
1 lbs chicken thighs - chunked
2 oz plain greek yogurt
1.5 tbsp lemon juice
3 clove garlic
1/2 tbsp minced ginger
1/2 tsp salt
1 tsp cumin
1 tsp garam masala
1 tsp paprika

Sauce:
2 tbsp olive oil
1/4 yellow onion minced
1 tbsp minced ginger
3 cloves garlic minced
1 tsp cumin
1.5 tsp turmeric
1 tsp coriander
1.5 tsp paprika
1 tsp chili powder
1.5 tsp garam masala
1.5 oz of tomato puree
1 cups tomato sauce (salt free)
1/2 cup water
6 oz lite cream
1 tbsp brown sugar
1/2 tsp salt

Rice Mix
1 cups long grain Brown Rice (dry)
Lite coconut milk (3oz)
1 tbsp olive oil

Vegetable Mix: 
Cauliflower - 6 oz cubes
Green Beans - 6 oz  - 1.5 inch pieces
Broccoli - 6 oz - small 1.5 inch pieces
Sweet Potatoes - 6 oz - small cubes

1/4 tsp pepper, divided
1 tbsp lime juice, divided
1 tbsp garam masala, divided
1/2 tbsp cumin divided
2 tbsp olive oil - divided

The Chicken Tikka Masala Bowl - a classic take out dish with tender marinated chicken, tangy red Indian-inspired sauce, seasoned roasted vegetables over coconut brown rice.

Preparation:

  1. Create the Chicken Marinade: cut chicken thighs into chunks, in a large bowl, mix in yogurt and other  spices.  Mix thoroughly, cover, refrigerate, let marinate for at least an hour or overnight.

  2. Cook covered in oven in a casserole dish until cooked through - Set aside.

  3. For Sauce: Sweat olive oil, garlic, onion, ginger over low heat for 15 minutes.

  4. Add in dried spices and brown until fragrant

  5. Add in tomato sauce - (blend sauce if needed to make smooth)

  6. Add tomato puree, water, brown sugar

  7. Simmer for 30 minutes

  8. Add in cream and strained, cooked chicken

  9. Simmer for additional 30 minutes

  10. For Rice: Cook 2 cups of dry brown rice with 6 oz lite coconut milk and necessary water

  11. Fluff with fork and set aside

  12. For Vegetables: Cut vegetables into designated size - 

  13. Add Green Beans and Broccoli to bowl with half above spices - mix

  14. Add Sweet Potatoes and Cauliflower to bowl with second have of spices - mix

  15. Roast mixtures of bowls separately 410º for about 15 minutes or until tender.  Broccoli and Green Bean mix will need less time than Sweet Potatoes and Cauliflower.
