Good Bowls - Sausage, Pepper, and Grits Recipe

Sausage Pepper Grits Bowl

The Sausage, Peppers, Grits Bowl - A healthy recipe packed with seasoned roasted vegetables, based on the Mediterranean Diet with a classic southern flavor.

Preparation:

1. Put the grits on to cook

2. Cut sweet potato, red pepper, green pepper, white onion, jalapeño and garlic; add into a mixing bowl.

3. Add olive oil, salt, chili pepper, oregano, black pepper, cumin and juice the lime into the bowl.  Mix.

4. Place onto a flat cookie sheet and spread evenly.

5. Place in oven and bake at 425º for 12-15 minutes – stir halfway through

6. Sauté pork sausage in skillet.

7. Place roasted vegetables into a large mixing bowl.

8. Add cooked sausage to veggies and stir

9. Scramble two eggs and mix in with grits

10. Place cooked grits and eggs at the bottom of a serving bowl and add vegetable mixture on top.

11. Add shredded cheese and serve.

 

Ingredients - Serves 4

white onion – 1 cup diced
sweet potato – 2 cup diced
green pepper – 1 pepper diced
red pepper  - 1 pepper diced
jalapeño pepper  – 1 pepper minced
garlic – 2 cloves minced 
1 lime

ground pork sausage – ¼ pound
olive oil - 1/3 cup
butter – 1 tbsp
grits – 1 cup
2 eggs
cheddar cheese – ¾ cup shredded 

salt - .75 tsp
chili powder – 1.5 tsp
oregano – 1tsp
black pepper - .5 tsp
cumin – 1 tsp
