Good Bowls - Big Al’s Big BBQ Bowl Recipe

At Good Bowls, we share all of our recipes. Good Bowls is in North Carolina y’all, so we’ve got to have a BBQ Bowl. This bowl is actually vegetarian and features Pit Boss plant-based ‘BBQ’ from our new partner No Evil Foods. It’s mixed in with some seasoned roasted vegetables, tangy eastern NC BBQ sauce, and served over brown rice. It’s a healthy new twist on an NC classic and sure to be a personal favorite at first bite.

Big Al’s Big BBQ Good Bowl

The Big Al’s Big BBQ Bowl- A vegetarian version of the NC classic featuring No Evil Food Pit Boss plant-based BBQ. Enjoy with your favorite BBQ sauce and a slab of corn bread.

Preparation:

1. Put barley on to cook and add ½ tsp of salt.  When barley has finished cooking add 1.5 tbsp margarine to barley and stir.

2. Cut white onion, zucchini, red pepper, sweet potato, jalapeño, and garlic and add to large mixing bowl.  

3. Add olive oil and juice one lime into veggie mixture.  Stir thoroughly.

4. Place veggies on baking pan, spread evenly, and bake at 435º for ~12-15 minutes or until veggies at desired tenderness.

5. Blanch Kale

6. Saute No Evil BBQ in skillet with 2 tbsp of olive oil.  Brown for ~ 3 min or until crispy

7. Add roasted vegetables and kale to BBQ and pour 1/3 cup of BBQ sauce over mixture. 

8. Simmer on low heat for ~ 10minutes

9. Serve over barley

 

Ingredients - Serves 4

Small white onion - diced
Zucchini cut into half moons
½ Red Pepper diced
Sweet Potato diced
Dino Kale - 3oz
Garlic - 4 cloves minced
½ Jalapeño minced

No Evil Pit Boss BBQ - 6 oz
Barley - 1 cup dry 
Olive Oil - 4 tbsp on veggies
2 tbsp in frying pan

1 lime
Salt - ½ tsp
Margarine 1.5 tbsp
Eastern NC vinegar based BBQ sauce - 1/3 cup
